This recipe delivers all the flavor in a fraction of the time, using just one skillet and no-boil noodles. It’s a weeknight hero.
Ingredients:
- 1 tbsp olive oil
- 1 lb ground Italian sausage or ground beef
- 1/2 onion, chopped
- 3 cloves garlic, minced
- 1 (24 oz) jar of your favorite marinara sauce
- 1 cup water
- 8-10 no-boil lasagna noodles, broken into large pieces
- 1 (15 oz) container ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 2 tbsp fresh basil or parsley, chopped (optional)
Instructions:
- Cook Meat & Aromatics: In a large, oven-safe skillet, heat olive oil over medium-high heat. Add the meat and onion, cooking until the meat is browned and the onion is soft. Add garlic and cook for 1 more minute. Drain any excess fat.
- Create the Sauce Base: Stir in the marinara sauce and 1 cup of water. Bring to a simmer.
- Add Noodles: Submerge the broken lasagna noodle pieces into the sauce. Reduce heat to medium-low, cover, and let simmer for about 20 minutes, stirring occasionally, until the noodles are tender.
- Add Cheeses: Preheat your broiler. Dollop the ricotta cheese over the top of the skillet. Sprinkle with the Parmesan and then the mozzarella cheese.
- Broil: Transfer the oven-safe skillet to the oven and broil for 2-4 minutes, watching closely, until the cheese is melted, spotty brown, and bubbly.
- Serve: Garnish with fresh herbs and serve immediately right from the skillet!
