This one-skillet wonder is impressive enough for brunch guests but easy enough for a random Tuesday. It’s basically eggs poached in a spiced, savory tomato sauce.
Prep Time: 2 minutes
Cook Time: 15 minutes
Total Time: 17 minutes
Ingredients:
- 1 tbsp olive oil
- 1 jar (24 oz) of your favorite chunky tomato pasta sauce or marinara
- 1 tsp smoked paprika
- 1/2 tsp cumin (optional)
- 4-6 large eggs
- Salt and black pepper to taste
- For serving: Crusty bread for dipping
Instructions:
- Simmer Sauce: In a large skillet with a lid, heat the olive oil over medium heat. Pour in the tomato sauce and stir in the smoked paprika and cumin. Let it simmer for 5-7 minutes until slightly thickened.
- Add Eggs: Use a spoon to create small wells in the sauce. Crack an egg directly into each well. Season the eggs with a pinch of salt and pepper.
- Cook Eggs: Cover the skillet with a lid and cook for 5-10 minutes, or until the egg whites are set but the yolks are still runny.
- Serve: Take the skillet right to the table (use a trivet!). Serve immediately with lots of crusty bread for scooping up the sauce and eggs.
Lazy Reward: A vibrant, globally-inspired dish that feels exotic and special, built on the back of a jar of pasta sauce. Only one skillet to wash.
