Ingredients:
- 8 oz (225g) of your favorite pasta (spaghetti, fettuccine, or linguine work well)
- 1 large ripe avocado
- 1/2 cup fresh basil leaves, packed
- 2 cloves garlic, peeled
- 2 tbsp fresh lemon juice
- 3 tbsp olive oil
- Salt and black pepper to taste
- Optional: Grated Parmesan cheese for serving
Instructions:
- Cook Pasta: Cook the pasta according to package directions in a large pot of salted water.
- Make Sauce: While the pasta cooks, scoop the avocado flesh into a blender or food processor. Add the basil, garlic, lemon juice, olive oil, salt, and pepper. Blend until completely smooth and creamy.
- Combine: Reserve about 1/2 cup of the starchy pasta water before draining. Drain the pasta and return it to the pot. Pour the avocado sauce over the hot pasta and toss to combine, adding a splash of the reserved pasta water if needed to thin the sauce to your desired consistency.
- Serve: Serve immediately, topped with a sprinkle of black pepper and Parmesan cheese if desired.
