Ingredients:
- 1 baguette, sliced
- 2 ripe but firm peaches, pitted and sliced
- 1 ball (8 oz) burrata cheese
- ¼ cup balsamic vinegar
- 1 tsp brown sugar
- ½ cup fresh basil leaves
- ¼ cup extra virgin olive oil, plus more for brushing
- Flaky sea salt and black pepper
Instructions:
- Make the glaze: Simmer balsamic vinegar and brown sugar until reduced by half. Set aside.
- Make the basil oil: Blanch basil for 10 seconds, then transfer to an ice bath. Pat dry, blend with ¼ cup olive oil, and strain.
- Brush baguette slices and peach wedges with olive oil. Grill or broil until toasted.
- To assemble: Place a peach slice on each crostini. Top with a piece of burrata. Drizzle with balsamic glaze and basil oil. Finish with flaky salt and pepper. Serve immediately.
