Replaces bread or crackers with seared, crispy slabs of cheese, used as a base for a bright, fresh topping.

Ingredients:
- 1 (8 oz) block of Halloumi or Kefalotyri cheese
- 1 pint cherry tomatoes, finely diced
- 1/4 cup fresh basil, thinly sliced
- 1 tbsp extra virgin olive oil
- 1 tsp balsamic vinegar
- Flaky sea salt and black pepper
- Balsamic glaze for drizzling
Instructions:
- Slice the cheese into 1/2-inch thick slabs.
- In a small bowl, combine the diced tomatoes, basil, olive oil, and balsamic vinegar. Season lightly with salt and pepper.
- Heat a non-stick skillet over medium-high heat. Cook the cheese slices for 2-3 minutes per side, until a deep golden-brown, crispy crust forms.
- Place the warm cheese “crackers” on a serving platter. Top immediately with a spoonful of the tomato confetti.
- Finish with a drizzle of balsamic glaze and a pinch of flaky sea salt. Serve immediately.
